Valentine's Day Subway Art & Coordinating Print: Part 3 of 3

So here’s the third and final Valentine’s Day subway art option. I decided to go for more of a “classic” look with this one. Enjoy! J

Here’s direction on how-to order this print from Costco:

***The Subway art is a 16x20 print, and the coordinating print is an 8x8 print.***

1.              Save the Subway Art to your computer. Then when you go to the   
        Costco website, click on PHOTO at the top and log in.

2.              Choose UPLOAD PHOTOS on the right sidebar. Choose the album
         you want to upload it to or start a new album.

3.              Select your photo by clicking on the arrow in the box and find
         where you saved the subway art and OPEN it.

4.              Under STEP 3 Select the FULL RESOLUTION UPLOAD. Then click on
         START UPLOAD.

5.              After that's loaded, select ORDER PRINTS on the right sidebar. Select  
         the one you want and ADD TO CART.

6.              Under PRINT OPTIONS, I always select LUSTRE, but that's up to you
         Under PRINT ORDER, select the size you want. (make sure to delete
         the 4x6 they already have selected. Then click CONTINUE.

7.              Choose your warehouse... and then on the PLACE ORDER screen,
         click on the EDIT OPTIONS and select DO NOT AUTOCORRECT MY
         PRINTS. Click CONTINUE.

8.              Make sure your order is correct and PLACE ORDER.

I went a little crazy this time around with subway art…I couldn’t decide on a design aesthetic so I made 3, plus a little 8x8 print to match each!  
 I especially love this print because the colors and fonts are very soft and sweet.

The layout is my own, and I used this free digital scrapbooking kit from Pixel Gypsy for the “paper” and embellishments.

Spanish Tapas: Crispy Bacon-Wrapped Stuffed Dates

I L*O*V*E Tapas! One of my most favorite Valentine’s Day dates was when my hubby took me out for Tapas. There’s just something about Tapas restaurants that are romantic; the lighting, the sharing of dishes, the music, etc. We had a dish very similar to this and it was love at first bite!

 I love bringing this recipe to parties (I brought it to both Christmas Eve and New Year’s Eve parties) because 1) is SO easy to make, 2) it’s uber delicious, and 3) it’s different from your typical party food.




Cook’s Note: The dates and goat cheese are usually expensive ingredients, but I got all the ingredients for this dish at Costco. The prices are much lower than at the grocery store and the quality is great.


Spanish Tapas: Crispy Bacon-Wrapped Stuffed Dates

Ingredients:

16 large Medjool dates, pitted
16 roasted almonds
1/4 C mild goat cheese, crumbled
8 slices of bacon (about 7 ounces), halved crosswise


Directions:

Preheat the oven to 400°. Cut a lengthwise slit in the dates and remove the pit. Stuff each one with an almond and about ½-1 teaspoon of the goat cheese. Pinch the dates closed. Wrap each date securely in a piece of bacon and arrange the dates, seam side down, on a wire rack set on a baking sheet.

Bake the stuffed dates for about 20-25 minutes, or until the bacon is browned and crisp; turn each date after 10 minutes. Serve the stuffed dates warm or at room temperature.

Make Ahead
The stuffed dates can be prepared through Step 1 and refrigerated for 1 day.

Day 4 of 12 Days of Christmas Fun: Cranberry-Pecan Chicken Salad

♪♫ On the 4th day of Christmas Food, Folks, and Fun gave to me…♪♫

Cranberry-Pecan Chicken Salad





I am a part of a fabulous group of ladies called “The Craft Addicts”. We recently put on a crafting event and I made some of the food for it. Among the things I made was this chicken salad recipe and it was a hit! A lot of people gave me compliments, and I think it’s the perfect recipe for a holiday luncheon. I served it on sliced croissants from Costco.



Cranberry-Pecan Chicken Salad

Ingredients:

4 -12.5 oz can of chicken, drained (I get mine from Costco)
2 t olive oil
Salt to taste
Pepper to taste

¼ C Miracle Whip
¼ C Non-Fat, Plain Greek Yogurt (I like the FAGE brand from Costco)
½ C cream or whole milk
2 t poppy seeds

1 C celery, chopped

1 T butter
½ C chopped pecans
1 C dried Cranberries


Directions:

Heat a non-stick skillet over medium high heat with 2 teaspoons of olive oil. Drain the chicken and cook in skillet until all the pink is gone (you may have to do this in batches depending on how big your skillet is).  Place cooked chicken in a large bowl and season with salt and pepper to taste. Cover and refrigerate until cool, about 1 ½-2 hours.

In a small bowl, mix Miracle Whip, Greek yogurt, cream/milk, and poppy seeds until combined. Pour the mixture over the chicken and season to taste with salt and pepper again. Add in the chopped celery and mix until well combined. Cover and refrigerate for at least 2 hours.

In a small pan over medium heat, melt the butter. Add the nuts and stir them often until they are toasted, about 4 minutes (they should be a little more than lightly browned and you’ll begin to smell them).

Add the toasted nuts and dried Cranberries just before serving, and mix until combined. Serve with split croissants.

Makes about 8-10 servings.

Thanksgiving Subway Art Printable

I knew I had to make a subway art printable for you all in honor of my favorite holiday, Thanksgiving. I love Thanksgiving for varied reasons but mostly because it’s a whole day dedicated to gratitude (and not to mention yummy food).

In the spirit of gratitude, my hubby and I started a tradition where for the entire month of November—during our family prayers each day—all we do is express our gratitude to the Lord. We’ve found that in the beginning of the month it’s a little slow going and our prayers are shorter than we’d think, but by the end of the month we feel such love and appreciation for the Lord, and friends and family that our prayers can go on for upwards of 5 minutes. It’s one of my favorite family traditions, and I highly recommend it!

Semi-Homemade Spinach & Mozzarella Ravioli

Yum! Who's hungry?

Recently I was asked what I do for dinner on the nights I don’t have time to spend an hour making dinner, and I thought my reply would make an excellent series of blog posts. So, every once and a while I’ll be posting “Semi Homemade” recipes that are not only quick and easy, but use ingredients that are easily found at the supermarket or Costco.
The Raviolis I get from Costco

I love this meal. The raviolis are ah-ma-zing and so easy to make (but be careful when cooking them because they’ll burst open if you boil them too rigorously…trust me, I know from experience). The tomato sauce is so fresh tasting, even though the tomatoes come from a can! I also use this sauce recipe over pasta with some sliced sausage or chicken…super yummy!


Semi-Homemade Spinach & Mozzarella Ravioli

Ingredients:

1/3 package Pasta Prima® Spinach & Mozzarella Ravioli (from Costco’s freezer section)
2 T Italian Herb Cheese Packet (included with the raviolis)

For the Sauce:
1 – 14 ounce can diced tomatoes
1/2 T olive oil
1/2 t garlic powder
1 t fennel seed
1 T chopped, fresh basil


Directions:

Cook the raviolis according to the package directions.

For the Sauce:
In a small saucepan over medium heat cook tomatoes, olive oil, garlic powder, and fennel seed. Cook the mixture until it comes up to a simmer and then turn off the heat.

Putting it Together:
Gently drain the raviolis with a slotted spoon and place in a shallow serving bowl. Let them sit for 2-3 minutes.

Sprinkle raviolis with 1 tablespoon of the Italian herb cheese packet. Using a slotted spoon, spoon the tomato mixture over the raviolis. Sprinkle with the remaining Italian herb cheese packet and top with the chopped basil.


Makes 3-4 servings (these little raviolis are very filling)

Overnight Praline French Toast



One of my first memories of cooking in the kitchen was when I was around 8 or 9 years old. I remember making French toast and pancakes with my dad. My dad was—and still remains—the king of pancakes. He has perfected his method over the years and right now is big on making pancakes the “size of your head”. He’s a big fan of the TV show “Man vs. Food” and when my parents host sleepovers with the grandkids he’s been know to run a “Kids vs. Pancakes” contest…so stinkin’ cute!

I was feeling a bit nostalgic when I planned a brunch for my dad and husband for Father’s Day. I didn’t want to make pancakes because there’s no beating my dad’s pancakes, so French toast seemed like the logical choice. My husband described this dish as “bomb-tastic” and more like a dessert than brunch…but seriously, could you expect any less from a Paula Deen recipe!?! ;) If you feel the need, you can drizzle maple syrup over the French toast, but I don’t think you’ll need to because it’s very sweet. The next time I make this I think I’ll cut the praline topping by a quarter or half just because it was a bit too sweet for my taste. I would however, add some toasted pecans between the layers of bread…I think this would make the dish unbelievably good! You should really try this recipe, it was a sinch to throw together!

Overnight Praline French Toast

Ingredients:

1 loaf nice, crusty Italian bread (16 ounces or so)
8 large eggs
2 C half-and-half
1 C milk
2 T granulated sugar
1 t vanilla extract
1/4 t ground cinnamon
1/4 t ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup (even though I don’t think you’ll need it!)


Directions:
I used that lovely, crusty Italian bread you get from Costco that comes in a 2 pak from their bakery.


Slice bread into about 16 slices, 1-inch each. Arrange half the slices in a generously buttered 9 by 13-inch flat baking dish.
First layer of bread in my buttered dish.

In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly.

Pour half the mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture.
First layer of bread with half the egg mixture poured over it.

Layer the rest of the bread in the baking dish and pour the remaining milk-egg mixture over the bread slices.
Second layer of bread.

Second layer of bread with the remaining egg mixture.

Cover with foil and refrigerate overnight.
After sitting in the fridge all night.

The next day, preheat oven to 350 degrees F.

Spread Praline Topping (see recipe below) evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.

Praline Topping:
1/2 pound (2 sticks) butter, softened
1 C packed light brown sugar
1 C chopped pecans
2 T light corn syrup
1/2 t ground cinnamon
1/2 t ground nutmeg

Combine all ingredients in a medium bowl and blend well.

Makes 6-8 servings.
