Whole Wheat Peanut Butter Chocolate Chip Pancakes

So, it’s been a few days since I’ve blogged and I have an excuse, I swear! The flooring on the bottom floor of the house had to be re-grouted so we played house-guest these last few days. My brother Jeff and his wife Bridgette were kind enough to take us in and in return I offered to make dinner for them. I gave them two choices: roasted vegetable fajitas or breakfast for dinner. As you can see from this post they chose breakfast for dinner and boy am I glad they did! These pancakes were so delicious and actually not all that bad for you. The recipe was originally for waffles, but I forgot the waffle iron at the house so voila…pancakes!



Whole Wheat Peanut Butter Chocolate Chip Pancakes

Ingredients:

1 ½ C all purpose flour
¾ C whole wheat flour
4 t baking powder
2 T sugar
2 large eggs, fork beaten
2 ¼ C milk
2 t vanilla
¼ cup vegetable oil
¾ cup smooth peanut butter
½ cup mini chocolate chips

Directions:
In a large bowl, stir together both flours, baking powder, and sugar. In another bowl, whisk together eggs, milk, vanilla, and vegetable oil. Pour into flour mixture along with the peanut butter and beat until smooth. Stir in chocolate chips.

Cook in a pan over medium heat.

Makes about 10 good-sized pancakes.

Mmm...these sounds amazing! I usually like to top my pancakes and waffles with PB, but I like the idea of adding it into the mixture! And you can't go wrong with Chocolate Chips either!

This is a great idea! I like peanut butter and chocolate (like reese's). I bet these make some delicious pancakes!

Kayla, I usually top my pancakes with PB, too! My husband thinks I'm wierd, but he doesn't know what he's missing!
